Breakfast Burrito Recipe

Sometimes it is just so hard to come up with new things to cook for breakfast.  You always have your stand by's of eggs, egg sandwiches, pancakes.  I could go on but you get my drift.

Years ago my husband used to stop every single day at the local fast food place and pick up breakfast.  Oh my goodness that stuff is so unhealthy.  I'm not sure how but I finely convinced him to let me start cooking him breakfast, something that he could just put into a small cooler and warm up in the microwave.

Some recipes do not work out really well but breakfast burritos always seem to be a hit.  They warm up well in the microwave and are much healthier than that fast food stuff.

The below recipe calls for Smart & Delicious Whole Wheat Large Tortillas but  you can use what you like.  I like these because they are only 80 calories each, low in  carbs and high in fiber.   And most importantly they taste yummy.

Hash-brown, Spinach, Ham Breakfast Burrito
Breakfast Burrito Recipe
1 Smart & Delicious Whole Wheat Large Tortillas
1 Large Whole Egg
1 Egg White
1/4 cup Simply Potatoes Shredded Hash Browns
Large Pinch Fresh Baby Spinach
Several Slices This Ham, Cut into bite size pieces
1 Wedge Laughing Cow Cheese (your choice of flavors)
Pam Cooking Spray

1.  Spray pan with oil, place over medium heat.  Place hash browns in pan and cook until nicely brownedRemove from heat and set aside   
2.  Re-spray pan slightly.  Add ham and brown just a bit, set aside with the hash browns
3.  Scramble egg and egg white together in separate bowl and set aside.  Re-spray pan just a little, put a large pinch of fresh baby spinach into pan and cook down until wilted.  Add egg.  Stir together with spinach until fully cooked, also set this aside with other ingredients.
4.  Warm tortilla for 8 seconds in a microwave oven on a large plate or paper towels.  Spread Laughing cow cheese over  the tortilla down the middle then place all other ingredients on top of the cheese.
5.  Fold ends towards the middle, then the bottom towards the top and roll over.
6.  Enjoy!

Cook Ham


Scramble Whole Egg and Egg White together



Add Spinach and wilt

 
Add Egg to Spinach and cook


Spread cheese
Top with all cooked ingredients
Roll up and enjoy!
